Ted's Vegan Maple Cheesecake
Graham Cracker Crust
2 cup graham cracker crumbs
3 tablespoons sugar
1/4 cup vegtable oil margerine
Mix together graham cracker crumbs, sugar, and margerine. Mix until well
combined. Press mixture evenly onto bottom of 10 inch springform pan lined with baking
parchment.
Filling
24 oz (2 packages) soft tofu
1 cup soy milk
1 cup sugar
1/2 cup maple syrup
1 teaspoon vanilla extract
In mixing bowl, combine tofu, soy milk, maple syrup, vanilla, and sugar. You can
alternatively use a blender. Pour mixture over the crust.
Bake at 350 F for 40 minutes or until center looks set.
Remove cake from oven. Chill, uncovered, overnight.
Top with sliced strawberries or other fruit.
