Ted's Pumpkin Bars
2 cups flour
1 1/2 cups sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
4 beaten eggs
1 16 oz Canned Pumpkin (or 2 cups cooked fresh pumpkin)
1 cup cooking oil
Combine eggs, pumpkin, sugar and oil. Mix till well combined. Add
cinnamon baking powder, and baking soda and mix well. Add flour and mix. Spread batter in
ungreased 15x10x1 inch baking pan.
Bake at 350 F for 25 minutes. Cool
Cream Cheese Frosting
1 three ounce package cream cheese
1/4 cup butter (softened)
1 teaspoon vanilla
2 cups powder sugar
In mixing bowl, beat butter, vanilla, and cream cheese till fluffy. Add
powder sugar gradually and beat until smooth. Spread over pumpkin bars.
Makes 36 bars.
